For you coconut lovers - I have not tried this recipe yet but it comes highly recommended by the person who gave it to me.

OATMEAL CAKE

Mix and set aside to soften:

1 c. oatmeal
1 1/2 c. hot water

Blend together:

2 eggs
1/2 c. oil
1 c. white sugar
1 c. brown sugar

Sift together and add to egg mixture:

1 1/4 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. ground nutmeg

Beat in oatmeal/hot water mixture. Bake in a greased and floured 9" x 13" pan at 350 degree oven for 40 minutes.

While the cake is baking for the first 40 minutes, make the frosting:

1/4 c. melted butter
1 egg
1 c. brown sugar
1 c. chopped nuts (walnuts or pecans)
1 c. coconut.

Mix together; spread on cake that has been baked for 40 minutes; put back in oven, bake for 20 minutes more.

Hi Ladies!
I just got home from yet another interview. And this Oatmeal cake recipe is STARING at me!
I just know that if I make it I am going to be the only one eating it. I've gained a few pounds back, so I think I might either try to cut the recipe in half, or wait until I can give some away..
tummy is grumbling thinking about it...

Let me be the first to report that the Oatmeal Cake is the bomb! Quick and easy to make and it's downright delish! Here's a picture of it....

The topping that you put over it for the last 20 minutes is plenty. Whoever mentioned making half of one, I just did that since I brought my first one to easter dinner and left it. I put the half one in a bread loaf pan and it's very wonderful, I just had a piece. It takes about 5 minutes to put together! Oh, yesterday I used pecans, today all I had was walnuts. The pecans were better!
