Does anyone have a simple/basic meatball recipie? One that would go well with spaghetti.

one pound chopped meat, 2 eggs, little milk, parmesan cheese and some bread crumbs - rub it up and fry the blls then pour some sauce and simmer- Leonie's version [img]/forums/images/graemlins/70367-help.gif[/img]Comment

unfortunately I have no real measurements, just eye ball things.
chop meat. go to the butcher to get this, not the supermarket.
some people use half beef half swine, depends on how you feel about pork.
in a frying pan, fry up a spanish onion- the big one. you want to chop it pretty fine. when the onion's golden brown, take it off the fire.
fold the onion into the meat, add in locatelli grated cheese, some bread crumbs- use 4C Italian. Drop in an egg. I like the farm eggs better than the supermarket ones. An if you ever saw them chickens and how they kept them you would too.
So you make up the balls, and you fry them in olive oil. When they are cooked through, drop them in the sauce. The more time they spend in the sauce, the more flavor comes into it. Best thing my nonna used to do was cook up some pork chops, she would make these rolls called braciole, dump them in there, the meatballs, and even hard boiled egg from time to time. it would cook all day on the stove.

i cook my meatballs on a cookie sheet in the oven...it's vastly easier and less messy than doting over the fry process.
In the oven i just turn them once halfway thru.
don't you put a little onion in with your breadcrumbs leonie?Comment

but then you have no flavor from the fry pan buildup or olive oil.

mi like yu recipe, rudemonk. what name locatelli cheese? also, what's your sauce recipe?
what i do:
ground beef, put in some oatmeal, onions, chopped up tomatoes, chopped pepper, thyme, oregano, ketchup (or tomato paste if i have a tin open), salt and pepper. fry, then cook down in spaghetti sauce. i never put in egg, maybe that's why my meatballs always in danger of breaking apart.Comment

failing all this, i found some fully cooked Italian balls in the supermarket that just need to simmer in sauce- they are delicious with some garlic breadComment

I am going to use a combination of the above, and use Loops' method of 'frying' the meatballs. BTW, Loops how long does this baking process take?

it's been a while Pepper...try 15 minutes at 350...roll them over and go another 10 or 15...then cut one open...seems like they should be done at that point...but of course, this depends on the size of your balls.
