Roasted sausage. I never thought of that [img]/forums/images/graemlins/70459-idea.gif[/img] Sound sooo good. Does it give the skin an nice cripsy texture? I am imagining that.

I make my bacon in the oven, and usually heat those packs of swedish meatballs in the oven. I am going to add sausage to my shopping list this weekend. Might just add some of the roast to my sauce.

Yes Pep... nice and crispy. [img]/forums/images/graemlins/70409-waytogo.gif[/img] I check them about 30 minutes into cooking and turn them.

When you mix your meatballs, I mix them really really well. It gives them a finer texture, which is just my personal preference. My mom usually drops in a couple spoons of hot water, just to moisten the bread crumbs. I don't, they absorb the egg moisture.

you know thinking of making these got me thinking about how my nonna used to make meatloaf.

She would basically do the same thing with the ground cow- fry onion until golden brown, take that and mix it all up with 4C Italian breadcrumbs- these really have the best flavor- and locatelli, an egg, and then she would lay half of it into her oven pan.

Now here is where it gets good- she would take sliced sicilian salami, it's the hard kind with the peppercorns, and she would put down a bed of salami on top of the bottom half of the loaf, and then on top of the salami would come some mozzarella, and hard boiled eggs would get laid down next. Then she would fold over the salami- you could use prosciutto if you wanted to, and then when she had folded over the salami she would complete the top of the meatloaf and then bake in the oven. So I guess the meatloaf would look "stuffed."

yeah. I miss her pretty badly. when she passed, it busted me up. I was in a real way over it.

but she lives on you know? cuz I always think on her, especially when I cook.

Thanks Witchy.

I typed meatballs and his search...nothing came up. I'll take another print of this thread.

I purchased all the materials for the sauce and the mballs, but the weekend was too busy to get any of it done. I am going to make the meatballs tonight, and use a jar of Newman's sauce. I might put the pot on for the sauce, though it won't be done until bedtime, but at least I will have it made.

I like Newmans as a base for a quick sauce. Really nice when you add your own meatballs and stuff.

Sometimes I find Jar sauces to be over seasoned, so I tone it down by adding a small can of tomato sauce or crushed tomatoes.

I'm cutting back on carbs, so I won't be making a sauce until I drop 20 pounds or so!! [img]/forums/images/graemlins/70361-embarassed.gif[/img]
