I cheat... I buy the mini pre-made shells and stock up on a variety of fillings (fresh, frozen or canned) [img]/forums/images/graemlins/laugh.gif[/img] then make a dozen or so as I need them ... OR... simply buy one of the huge delicious ones at my grocery.

Apple Cheese Crisp

6 cups sliced pared apples
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 tablespoon lemon juice
1/4 lb grated cheese (1cup)
1/2 cup sugar
2/3 cups flour
1/4 teaspoon salt
1/3 cup butter/margarine
1/2 cup corn syrup

Heat oven 350F. arrange apples in a greased 10x6x2 baking dish. sprinkle with cinnamon and nutmeg. pour lemon juice and corn syrup over apples. combine sugar,flour and salt,cutting butter until butter misture is consistency of coarse cornmeal. lightly stir in cheese,then top applese with mixture.

bake uncovered for 1 hour or until apples are very tender.serve with or without cream while warm....make six generous servings.

sometimes you go back in time an you can almost smell and touch the day you last had something. well its like this with this pie....have not had it in over 8 years...here it is

Mikan (Mandarin Orange) Pie

1 envelope unflavoured gelatin
2 tablespoon cold water
1 cup boiling water
1 cup sugar
1/2 cup fresh lemon juice
1 cup whipping cream
1 11oz can mandarin oranges,drained
1 baked 9in. pie crust

Soften gelatin in cold water. stir in boiling water. add sugar and stir until dissolved. add lemon juice and stir. refrigerate until slightly thickened but not set.
whip cream until thick,fold into gelatine mixture, (you may use mixer set at lowest speed). add mandarin oranges and stir gently until evenly distributed.
pour into baked pie shell.garnish with orange slices or canned mandarin oranges.
refridgerate at least 3-4 hours.serve with whipped cream on top. serve 8

APPLE PIE IN CHEDDAR CRUST

CHEDDAR PIE CRUST

2 c Unbleached flour; sifted
1 1/4 c Cheddar; medium, shredded
1/2 ts Salt
2/3 c Vegetable shortening
5 or 6 tb Water; iced

FILLING

7 c tart Apples, peeled, cored & sliced
1/2 c Sugar
2 ts Unbleached flour
1/2 ts Cinnamon; ground
2 ts Butter or regular margarine
1 Egg yolk, beaten
1 ts Water

CHEDDAR PIE CRUST: Combine the flour, cheese and salt in a bowl. Using a pastry blender or two knives, cut in the shortening until coarse crumbs form. Sprinkle the iced water (5 or 6 tablespoons will be needed) and using a fork, toss the crumbs until a dough is formed. Press the dough firmly into a ball.

Divide the pastry almost in half and roll out the larger half, on a lightly floured surface, to a 13-inch circle. Line a 9-inch pie plate with the pastry, trimming the edges to 1/2-inch beyond the rim of the pie plate. (Note: When lining the pie plate, be careful not to stretch the pastry when spreading it out. This will cause holes or the pastry will shrink and the filling will run over in the oven as it is baked. Place in the pie plate and gently, working from the center, spread the pastry out until it covers the bottom of the pie plate and then lay the rest of the pastry over the rim and trim.)

FILLING: Combine the apples, sugar, flour, and cinnamon in a bowl, mixing well. Arrange the apple mixture in the pastry lined pie plate. Roll out the remaining pastry to an 11-inch circle. Gently fold into quarters and cut steam slits in the folds. Unfold the crust and place on top of the filling, trimming the crust to 1-inch beyond the rim of the pie plate. Fold the top crust under the lower one and flute to form a ridge around the edge of the pie plate. Combine the egg yolk and water, then brush the mixture over the top crust and rim. Bake in a 400F oven for 45 to 50 minutes or until apples are tender and the crust is a golden brown. Cool on a wire rack until slightly warm and serve with Vanilla Ice Cream, if desired.

Grandie .... I broke down the other day .... I was looking thru my Dear Mother's cookie recipe book .... I found a recipe written out in her handwriting .... brought me to tears ....

Pat's Rio Lemon Chiffon Pie Supreme

1 Pie shell regular or graham cracker
1 Envelope unflavored gelatin (Knox)
1 C Sugar
1/4 C Water
4 Eggs separated
1/2 Tsp salt
1/2 C Lemon juice (bottled Real Lemon juice)
1 T Lemon rind grated
1 Square semi-sweet chocolate
1 T Shortening
1 C Heavy cream

Soften gelatin with 1/2 C of the sugar in water in top of a double boiler.

Beat egg yolks slightly in sm bowl. Stir into gelatin mixture with salt and lemon juice.

Cook-stirring constantly over simmering water - 5 minutes or until mixture thickens slightly and coats spoon. Strain into large bowl.

Set bowl in a deep pan partly filled with ice and water to speed setting. Chill stirring often for 5 minutes or just until as thick as an unbeaten egg white.

While gelatin mixture chiils, melt chocolate w/shortening.

Beat egg whites until foamy, sprinkle in remaining 1/2 C sugar and continue beating until it stands in stiff peaks. Beat heavy cream until stiff in second bowl.

Fold meringue, then cream, then lemon rind into gelatin mixture until well blended.

Spoon about 1/2 of all that into baked/graham cracker pie shell, drizzle with chocolate. Repeat to make 2 more layers and top with chocolate swirls. Chill for several hours until firm.

Sweet Potato Pie

3 sweet potatoes, about 10 ounces each
1 3/4 cups fine graham cracker crumbs (about 15 whole crackers, finely ground)
1/4 cup dark brown sugar
8 tablespoons unsalted butter (1 stick), melted
2 large eggs
1/2 cup plus 1 tablespoon dark brown sugar
1/2 cup heavy cream
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon vanilla extract


Preheat the oven to 350 degrees F.
Wrap the sweet potatoes tightly in 2 layers of aluminum foil and roast them in the oven until very soft, about 1 hour and 15 to 20 minutes. Remove from the oven and allow to cool.

In a bowl, stir the graham cracker crumbs and brown sugar until well combined. Add the butter and mix until the crumbs are evenly moistened. Press firmly and evenly on the bottom and sides of a 9-inch pie plate to create a crust, being sure there are no cracks. Bake in the oven for 10 minutes or until golden. Remove from the oven.

Meanwhile, make the filling: Unwrap the potatoes and peel them. Put the flesh into a bowl and mash well with a fork. Add the eggs, 1/2 cup brown sugar, cream, flour, cinnamon, nutmeg, and vanilla and whip until very smooth with a whisk. Pour the filling into the partially baked crust. Sprinkle about 1 tablespoon brown sugar over top and bake in the center of the oven until set, about 40 minutes.

Allow the pie to cool completely before cutting. Serve at room temperature.

PEANUT BUTTER PIE

Crust
1 - pkg chocolate wafer cookies
5-6 - tbs. butter - melted

Filling
2 - 8 oz pkg. Cream cheese
1 - lb peanut butter
2 - tbs vanilla extract
1 - cup sugar
1 1/2 - cups heavy cream or whipping cream - whipped

Topping
1/2 - cup heavy cream
6oz - semi sweet chocolate chips

Crush cookies or process
mix well w/ melted butter
press into 10" pie plate
chill

blend 1st 4 FILLING ingredients until smooth
FOLD IN whipped cream

pour into pie crust
chill

melt choc. chips in double boiler w/ half cup heavy cream mixing well until smooth
let cool slightly
pour over top of pie

serve with a dollop of whipped cream if desired.

NOTE* this is a restaurant size recipe and very rich. It is a very thick/fat pie that some find too rich as it is
It can be made ito 2 smaller/thinner pies using smaller pie plates.
