I marinate my jerk chicken over night and cook it low over coals. It's always very moist and juicy! I don't know if I can wait till christmas for jerk now. I'll have to whip up a batch of marinade sooner I think!
I do not mean totally dried out but you know how it is straight off the barrel in jamaica like a smoky dry??It's hard to explain but I am sure you understand,it doesn't drip in fat like how sometimes it may in an oven.It's just a different taste and smell over coals and bbqs and grills than in an oven

Is gonna be a COLD bugger today with a high of 1 and a high windchill of 20 to 30 below. I'd love to stay inside where it's warm but I got up early to bathe Toby the Schnauzer so I can get him good and dry in time for him to meet his new prospective parents! It would be so great if he could be in a forever home in time for Christmas...
