dat is head .. foot .. <span style="font-weight: bold">internals</span> .. including tripe ..
cut dem up wid a heavy axe or power saw ..
these are some very tough bones ..
if not available cook dem whole ..
buy the time you are through ..
most of the meat will be off the bone ..
tripe must be cleaned thoroughly and cut into 1-3 in. sections/pieces ..
cover parts with water ..
bring to a boil for about 1 hr ..
add onions .. escallions .. thyme .. scotch bonnett . cho-cho .. carrots .. green bananas .. hard yellow yam .. dumplings over a 4 hr simmering time ..
drink while hot ..
try dat ..
