J kid, my roasting lessons came by watching mi parents preparing breadfruit for roasting. Modern oven baked breadfruit is OK but lacks the flavour of the chalkcoal roasted fruit.. How many here knows how the breadfruit is prepared for roasting, let us hear...

After 24 hours Barosa, let me try. First yu pull out de stalk. Then yu use a knife and cut a cross or cut crossways on the opposite side of where de stalk did deh.
Some folks like when after picking, to let the breadfruit lie down for a day and bleed weh yu pull de stalk out, then put it pon de fyah.
Some wouldn`t believe seh is a scienfitic ting involved in roasring b/fruit, yu nuh Barosa.

Q, you are 50% right as per my father's teachings. Once the stem is removed which is customary, get a sharp knife with the blade no longer than 2/3 the height of the fruit (bottom to stem).. This knife is carefully thrusted through the opening provided by the stem removal, all the way down into the heart of the breadfruit and then carefully removed. In my dad's case cuting of the cross at the bottom was done next. ~ The top part (where stem was) faced the the hot coals first, then fthe bottom next..With these two &quot;burns' the fruit is about or more than 50% roasted. I still used the same method in baking my breadfruit to this day... Q, as you stated, the science is obvious..
