Here in Ghana dasheen leaves are called Kontomire (pronounced KonTUMeeray) and it's the commonest 'green' - we call it 'leaves' - and it's made into a stew with the usual Ghanaian seasonings: ginger, peppa, garlic, mormone (fermented salted fish, think shrimp paste) dawadawa (think Chinese 'black beans'). tomato and onion, and includes any meat and/or smoked salmon or tuna. It's cooked in zomi (the local palm oil). It is eaten with rice, yam, sweet potato or gari (cassava meal cooked with a little water into a ball), banku (fermented maize and cassava meal dough) - the latter sort of an acquired taste. We had some for dinner this evening and it was first rate (I can say that because I didn't cook it . )

JAMAICAN PEPPER POT SOUP RECIPE

INGREDIENTS:

Serves: 4 - 6

1 lb Callaloo or Spinach
12 Okras
12 cups water
1/2 lb salt beef
1/2 lb shin of beef
4 Cups water
1 Can of coconut milk
1/2 lb Yellow Yam (peeled)
Crushed escallion
Sliced hot peppers
Black pepper

Wash the callaloo then chop finely. Boil in water with the salt beef and shin of beef until beef is tender, usually about 2 hours. Add the coconut milk, yam, okras, escallion, hot peppers, and black pepper. Add water if necessary. Simmer for 30 minutes. Soup should be thick in consistency.

Ingredients:
2 pig trotters or 1 cow heel
2 lb stewing steak or brisket
8 oz pickled meat
2 lb ox tail
¼ pt cassareep
2 red peppers
1 inch piece dried orange or lemon peel
1 inch piece of cinnamon stick
3 cloves
2 oz sugar
salt to taste
Instructions:
Wipe and clean meat thoroughly.
Put heel or trotters in pan. Cover and bring to boil. Skim.
When half tender, add other mats, and hot water to cover. Cook for about 1 hour.
Add other ingredients and simmer until meat is tender. Adjust flavor for salt and sugar. Serve hot.

Serves 8

Note
This dish develops more flavor when left over a period of days. It must be reheated o boiling point each day. This is a typical Amerindian dish.

Because they font sell dasheen leaves in the markets it's use ususlly restricted to family in pepper pot soup.

Because dasheen Is not widely farmed in the southern And western sections of the country the use of the leaves are nit used There in pepper pot soup.
The primary input in pepper pot soup is the use of green leafy vegetable.
Pepper pot soup in Jamaica does not necessarily include any pepper.
Most people Do not put pepper in it.

Pork isn't used much in Ghana. Muslims can't eat it and many other Ghanaians don't. I guess I had enuff of it in Canada to last me a lifetime. But ppl do eat dogs and cats. To each his own, I guess.......

People in my own neighborhood here set traps for cats and sometimes steal people' s dogs. One of my beloved cats was stolen and one of the next-door-neighbors' dogs

Reaslistically, there's no SPCA here (or Humane Society) and the authorities have far more pressing matters to worry about. The only thing one can do is find the culprit and take him/her to court.

The vets are also very few and most ppl can't afford to take their pets there and so they don't get spayed of neutered, and this has obvious consequences. And so one can understand to a certain degree that 'extra' (stray) dogs and cats are at least being put to some good use. But there's no excuse for STEALING somebody's beloved pet unless of course it's hunger and starvation.

But I also hear that some ppl just <span style="font-weight: bold">like</span> them.

Cat Stew and Barbecued dog shiskebabs are quite popular with some people, depending on their ethnic group and tribe.

I can't bring up your picture, but I assume you're talking about Bush Rats. They are quite popular as are Grasscutters which are even raised in captivity for human consumption. Up North ppl eat monkeys and other 'bush meat' as a tradition and in order to survive.

I don't believe I've eaten a bush rat but I have eaten Grasscutter and it is quite nice!

You won't find dogs and cats on the menus of restaurants - THEY WOULDN'T DARE!!
But they are eaten in ppl's homes and nobody thinks anything of it.

It's the grasscutters that I saw on the roadside.

Just googled some pictures and they look quite nice and fat when they are alive.

But when you see dem drap up on a hook dangling on the side of the road it doesn't look appetising at all.

I could never eat the good old Jamaican country fowl raised and fed in the yard. The eggs yes, but nay their necks. I admire them so, especially the rooster how he watches over his brood and the sounds made for most occasions, whether warnings in alarm, the call for a new found eat like a roach or a grain of corn or the crack of day cock a doodle doo

Magix, they are often lightly smoked and so taste a bit smokey - or maybe the coat has been singed off. Ghanaians eat the skin of a lot of animals along with the flesh.The taste is impossible to describe as they are rodents and there aren't a lot of comparisons. It reminded me of some Capybara I once had in Georgetown, Guyana, actually. Those guys are the biggest rodents on Earth.

Q, I adore the fowls in the yard here too. If I ever had to leave here my heart would be broken by not hearing the sounds of the cocks and fowls and baby chicks in the early morning. And to never see the goats and herds of sheep wandering around again would be too much!

I only hope that day never comes.
