Jazz, please try it. let the lamb cook little bit before you put in the spices because it has a thick gravy. side dish of cous cous is recommended as the lamb is so savoury.

<span style="text-decoration: underline">Twice-cooked curry goat </span>(my own recipe)

Cut up goat leg and shoulder into pieces
Rinse with fresh lime water and pat dry
Season with dry seasonings: garlic powder, sea salt, ground pepper, onion powder, likkle dry jerk seasoning.
Put in glass container, seal tightly, then put in fridge overnight.

Next day:
Turn on oven on high. 450 degrees. Yes, dats correct.
Spread seasoned goat pieces evenly on to baking pan.
Put in oven.
After about 20 minutes, watch carefully. Check to see that goat meat has crisp brown edges.

During that time, cut up fresh onions, potato, garlic, and green scotch bonnet.
In heavy cast iron or dutch pot, pour bout 1/2 cup olive oil then add fresh seasonings.
Turn off oven. Transfer goat to dutch pot.
Stir it up. Den add curry stuff - curry powder, coriander, tumeric, thyme - di usual. Add small can of coconut milk. Grate a choops of nutmeg (a Guyanese lady gave me this tip for curries).
Add enough water to stew it down. When boiling, turn down heat and simmer for a long, long time until nice and thick like how you expect it.

I am intrigued by the twice cooked curry goat - mi HAFFE try dis wan... it look two times mouth watering!!!

Also I am curious about the stew peas with black beans - is that in addition to the regular peas or as a substitution?

thanks Sue - any special cut of lamb I should look for? or just the lamb chunks that look like beef stew?

i've extolled it before, but i use the african style lamb with the skin on because i like skin. but any lamb will do - even the new zealand lamb. lawd missis after doing the mostly vegan thing in the week, it's a delight. mi can't wait. mi aggoh season it up from tomorrow and den cook it on sunday.

I soak the bread pieces overnight in unprocessed whipping cream or halh n half, and brandy, Tia Maria, Bailey's Francgelico (sp) and another orange liquer I cant remember at the moment. Then bake drunk pieces the following mornging on Christmas Day

You allergic to shellfish? Sorry. As fi di goat, just roast it good then cook as usual. I used to make this each New Year's Day for a jazz listening group thing at Howard U. By year 2, people dem ambush mi crock pot

Yes ma'am. Mi substitute black beans fi mi chew peas. I love di taste. Once you go black, can't go back!
