if you think about it, the filling in a beef patty is not unlike chili

yeah, white rice will work...some people like just saltine crackers....sometimes I like it with mac &amp; cheese

There's a thing on menus down here called &quot;Frito pie&quot; where ya puts fritos in a bowl, chili on top of that, then cheese, lettuce and tomatoes and whatever. Then there's chile dogs....chili burgers, green chile stew, chile everything. Diffrent kinds of chile on top of anything. At restaurants the question: Red or Green? If ya say &quot;christmas&quot;...it means a little of both.

my chicken chili recipe:

1 lb ground chicken
1 can kidney beans
1 can black beans
1 can whole kernel corn
i large can tomatoes (i use ground but crushed is good too)
1 small can tomato paste
onion
garlic
chili powder
dried chili pepper optional

brown ground chicken with onion and garlic ..sprinkle on some chili powder if you like - you can add soem black pepper too.
strain and rinse the beans and set aside.
once chcik is browned add tomatoes and tomato paste..stir an lower heat.
ah a generous amount of chili powder (like 3 or 4 tbls spoons)

add beans and corn a leave to simmer for 45 mins to an hour

Monday I started with dried pinto beans and at this altitude (7500ft.) it takes 2 days to cook. I had some ground elk meat I used....and in addition to what you mentioned, I threw in a small can of chopped green chiles, and a touch of cumin, and a &quot;milagro&quot; spice mixture to go along with the chile powder. I go to see Carlito down in Chimayo for the good stuff. Roasted green chiles are sold everywhere, and on the roadsides...in burlap bags, in season.

Many jamaicans would prefer to make stew peas or a ital stew wid them peas than make chilli..

Jamaicans did love them baked bean and butter bean ,long time.

They use to have it with even plain white rice.

It as just a matter of time before they marry it to salt fish.
With the ground meat and the different diseases, like mad cow and such.
Jamaicans are too health conscious to get them to want to use ground meat unless you disguise it patties and meat loaf.
And not the American meat loaf i am talking about.

They won't even eat American chopsuey, much less.

I think they have a problem with seeing the ground meat while eating it.

You can't substitute it for Jamaican beef patty filling though!!

The strange thing is that the average Jamaican will eat Tin cornedbeef with rice,over minced beef with rice any day. Not really I've seen where they get choice where they werw not even paying for it (on an ocean going boat) and they chose tin beef over fresh ground beef. And on the boat every eat until they are full. The Fish head soup Im getting used to but what's up with da Chicken feet in da soups? There is no weh you can get dem feet clean nuff from where deh pon over da chicken coop (tastes like &quot;hepatitis&quot; )
