Chicken feet actually have a transparent covering that has to be removed before cooking.
Otherwise it you would not be able to chew it.
The covering thatis removed has the consttency of like plastic.
So after that is removes all trace of their association is supposed to be gone with it.

As for the reason why it is in the soup.

It is because that is all they use to make the sooup.
If they remove thefeet, it would be just probably water and spices.

Here is a version that J Can's may like mi tinks

2 pounds chopped up chicken,oxtail, or goat (any of which could be marinated with jerk sauce or cooked w/ jerked first)
1 46 oz tomato juice
1 32 or 46 oz V8 (veg juice)
3-4 approx 15 oz tins of kidney beans (or subsitute Jamaican &quot;peas&quot
1 lg onion chopped (I like the hotter red onion)
3 lg chopped up tomatoes or 2 15 oz tins
1 chopped up whole bulb of garlic (optional)
1 Scotch Bonet peppa sliced in quarters (to taste/hotness level desired)
Lots of chili powder (to taste) ** Or you can use any of your small pepper sauce bottles and add to hotness level while you cook it or in the bowl when you eat it**

You could ladle it over a small amount of white rice if you desire, or add corn, potatoes,many other tings.

<span style="font-weight: bold">Mix everyting up in soup pot or crock pot, slow cook on low heat for 3-4 hours keeping covered. </span>
Chili can be about any ting you want to put into it. Over here some people have chilie parties where each guest will bring a small already cooked(ie- 2 qt container) and everyone will combine theirs into the big pot, simma for awhile and eat up. Cornbread or peanut butter bread/plain bread, crackers go on the side, along with grated cheddar cheese to top..

they will cook with tomatoes, and eat it raw, but the sauce??
that is a no no.
It maybe because they use allspice so much.

Once you get hooked on allspice, you avoid tomato sauce.

Well at least that rarely have any tomato in it anyway.

It is all starch colouring and flavouring.

look at the ingredients again.

I think there is more aversion to the actual &quot;chili&quot; seasoning....a totally different flavor than country peppers....probably the &quot;tomato paste' also....everything I've seen cooked in Ja. has a likkle bit a dis &amp; a likkle bit a dat &amp; not too much a enyting....it just boils down to using what is available there. N. Americans are used to a wide variety of choices, so just cook differently.

With the ground meat and the different diseases, like mad cow and such.
Jamaicans are too health conscious to get them to want to use ground meat unless you disguise it patties and meat loaf.
And not the American meat loaf i am talking about.

No one in my family ever heard of Chili 'til we reach Canada. We all like it now though. Nothing like a hot bowl oh Chili on a cold winter's night.
